How to make a mooli salad
1 cucumber
1 mooli
Mooli also called daikon or Chinese radish is a long white root that makes a deliciously crunchy salad that’s the perfect accompaniment to sashimi.
Peel the mooli and cut into 4 lengths.
Using a mandoli slice into long thin lengths. Cut the cucumber into thirds and grate (discarding seeds as you go).
Place the two vegetables in a bowl and mix. Fill with tap water. Add ice cubes.
Refrigerate for 30 minutes.
Drain, the mooli should be translucent and very crisp.
